Good Gathering: A Foraging Masterclass & Lunch @ Thyme

  • Thyme Lechlade, England, GL7 3NX United Kingdom (map)

Look forward to plates inspired by the very best seasonal and wild ingredients

Join me for a seasonal walk, exploring the wonderful grounds and kitchen gardens of Thyme @ Southrop.the

We will meet in Thyme’s cookery school for a short introduction to sustainable foraging, and then head out to the gardens and meadows of Thyme for an informative walk on the wild, edible plants to be found and the opportunity to forage some of nature’s harvest, with an ethos towards sustainability and an utmost respect for the environment.

Returning to the cookery school, we will work together to craft a seasonal syrup from our gathered edibles, which once home you can choose to use as a base for for sauces, salad dressings, tonics and cordials. Following this there will be a short masterclass with the Thyme bar team, on how to use the syrup to make a refreshing botanical tonic or cocktail, before we all head off to lunch at the chef’s table in Thyme’s stunning Ox Barn restaurant, with a meal crafted from a variety of foraged and garden grown ingredients.

If you have any questions please email reservations@thyme.co.uk.

Inclusions: Guided foraging walk & talk, set menu Chef’s Table lunch in the Ox Barn, foraged syrup making workshop and botanical tonic masterclass.

Please Note: Dress appropriately for the weather and wear sturdy boots or wellingtons (a selection is available from reception on request).
